Seasoning refers to the process of developing a protective coating on cast iron through applying oil and heat. Thanks to the interior enamel of our lutô casseroles, they’re ready to go out of the box, no seasoning required.
Our advice is simple: do not use metal utensils. Your lutô casserole is tough, but not indestructible. Less abrasive tools like wood and silicone are your cookware’s best friend. If you see little scratches and lines after using a wooden spoon or silicone spatula, don’t be alarmed. This is normal and won’t impair performance at all. In many cases, these marks can be completely removed with a cookware cleaner like Bar Keepers Friend.
Our cookware can be used on all types of cooking surfaces - gas, electric solid plate or radiant ring, ceramic glass or induction. It is safe to use in the oven up to 450°F (260°C). Please note, although our cookware will withstand hotter temperatures, discoloration or warping of the knob may occur. If cooking on a glass cooktop, take care to lift your cookware to prevent scratching the surface.
Your cookware is designed to be anti-stick but a little bit of fat goes a long way. We strongly recommend always starting off your cooking with oil or butter. The bottom of your casserole is made with vitreous enamel: it will thank you and will be easier to clean if you cook with oil or butter and heat your casserole up gradually.
Hand washing is best. Allow your lutô casserole to cool completely before washing it with warm water, soap, and a non-abrasive sponge or cloth. Wipe your lutô casserole dry and store away from humidity. For a little extra TLC, apply a small amount of any neutral cooking oil to the rim of the pot and the edge of the lid before storing. Make sure that your lutô casserole isn’t in direct contact with other utensils (especially metal) during the cleaning cycle to avoid scratching.
Never plunge your cookware into water while it’s still hot. Our enamel is durable, but thermal shock is still possible, especially for the cast iron beneath the surface. This rapid temperature change may result in cracking the enamel. For best cooking results, ensure even heat distribution by starting with low to medium heat.
Scorch marks tend to look like black splotches on the bottom of your cookware and are also normal with regular use. To remove them, we recommend cleaning the bottom of your cookware with baking soda and water or Mr. Clean Magic Eraser, which usually gets rid of them easily.
After an epic cooking session, you may notice residue at the bottom of your lutô casserole. Soak your cookware with boiling hot water for 10 to 15 minutes, rinse, and dump some kosher salt inside and scrub around to get a little abrasion.
